Stuffed peperoncini

I saw these little peppers at the Wednesday food market in Bagni di Lucca and just had to buy them and do something with them. A very kind lady who was shopping beside us gave us the recipe for tuna stuffed peppers and I went home immediately to make them.

The peppers are about the size of large cherry tomatoes.

The first step is to don rubber gloves and cut the tops of the peppers and remove the seeds. The helpful lady at the market suggested the gloves as the peppers are a bit hot and may burn the skin.

Fill a small saucepan with enough water and white wine vinegar (more vinegar than water) to cover the peppers. Add salt. Boil the water and vinegar and then put the peppers in. Boil for about 5 minutes until they are tender.

Drain upside down on a paper towel.

For the stuffing I mixed a 200g bottle of tuna (minus the oil) 2 anchovy fillets and some capers.

I mashed them together and added some chopped flat leaf parsley.

Then I stuffed the filling into the peppers.

I put them in a small dish and covered them with olive oil.

I made 12 stuffed peperoncini. They were delicious. I think they might keep for a few days in the fridge, but I don’t know because we ate them.

  2. Those look delicious…it’s so funny…I’ve eaten them in restaurants and loved them, but never thought of doing it myself. Why not???? Dunno…but now I think I will!

    • They only took about 20 minutes to put together…really easy.

    • I haven’t seen these at our local market before, but I will be keeping an eye out for them in future.

  7. Yum Deb! I’ve never seen these for sale here, except already stuffed at the deli! They look so much better fresh! 🙂

    • They are quite expensive at the deli, much better to make them yourself.

  14. These look delicious and I just bought some small peppers yesterday that I was planning on stuffing.

    • These ones are fairly hot, but delicious.

  15. They look totally delicious. I can honestly say that if they were on a plate in our house they’d last all of five minutes, and that’s pushing it.

    • There were 6 of us, so we only had 2 each. I will make more next time.

    Love peperoncini. I buy those packets of spices you find in Italian markets and give them as gifts to friends and family. I experiment with them, using one or two tablespoons sauted in olive oil for many dishes including meatloaf and many pasta dishes and seafoods.

    • We ate them just a little while after they were prepared.

  20. Debra after reading “Stuffed peperoncini” went to our local ‘Coles’ and there they were for sale. I have never seen them for sale locally before or after. They were delicious, so I planted some of the seeds and now have countless plants growing. Looking forward to the harvest.
